The lemon juice brightens up the oil-based dressing, and the fresh mint complements the sweetness of the honey and lends a Spring touch. You'll actually look forward to eating salads if you've got this in the fridge.

Honey-Lemon-Mint Vinaigrette

INGREDIENTS

    • 1 tablespoon lemon juice
    • 3 tablespoons olive oil
    • 1 teaspoon honey (or more, to taste)
    • 1 tablespoon chopped fresh mint leaves
    • Zest of 1/2 lemon, optional

    INSTRUCTIONS

    1. Combine all ingredients in a mason jar or bowl. Shake or whisk to combine, and serve with salad.

    Notes

    After tasting the dressing, you can adjust the ingredients to your preference. Add more honey if you want it a little sweeter, or add a pinch of salt if you desire.
